Recipe of the Week: Zucchini Cauliflower Soup

Ingredients:

  • 1 small onion
  • 5 medium zucchini
  • Onion soup mix
  • 2 bags frozen cauliflower

Directions:

  1. Saute onion in very little oil; just enough to grease pot
  2. When soft, add 5 medium zucchini
  3. Cover vegetables with water
  4. Add salt, pepper and onion soup mix
  5. When zucchini is soft, add 2 bags of frozen cauliflower
  6. When cauliflower is soft (20-30 mins), blend

Thick, creamy, delicious and healthy!
