Recipe of the Week- Parmesan Sweet Potato Wedges

Ingredients:

  • 1 sweet potato
  • 1 egg
  • 2-3 egg whites

Garlic Parmesan Breading:

  • ¼ -⅓ cup whole wheat bread crumbs
  • 2-3 tablespoons parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions:

  1. Preheat oven to 375˚F/190˚C.
  2. Cut sweet potato into wedges. Set aside.
  3. Prepare the breading mixture in a large bowl and set aside. Whisk eggs in a separate bowl.
  4. Dip wedges in the egg mixture, one by one, followed by the breading mix, and place on a baking sheet lined with parchment paper.
  5. Bake for 30-35 minutes or until golden brown. For best results, flip halfway through.

Makes 1-2 servings – Count each serving as a complete lunch or dinner.

Add a salad, but do not add a fat to this meal.
