Recipe of the Week: Garlic String Beans

Ingredients: 

  • 2 pounds green beans, trimmed
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons minced garlic or 3 garlic cubes
  • 3 tablespoons minced fresh parsley
  • 2 dill cubes
  • ½ teaspoon salt
  • Freshly ground pepper, to taste

Instructions:

  1. Bring a large pot of water to a boil. Place a large bowl of ice water next to the stove. Add half of the green beans to the boiling water and cook for about 4 minutes until tender-crisp. Transfer the beans with a slotted spoon to the ice water to cool. Repeat with the remaining beans. Using a slotted spoon, scatter the beans on a clean towel and blot dry.
  2. Just before serving, heat oil in a large pot over medium heat. Add garlic and cook, stirring constantly (about 30 seconds). Add the green beans and stir. Add parsley, dill, salt, and pepper and cook. Stir occasionally for 1-3 minutes until heated through.

Makes four servings.
