Tanya’s Tip of the Week: Take The Bitter Out Of The Eggplant

Eggplant is a great vegetable for a healthy lifestyle but sometimes it might taste too bitter so here’s a trick to help you reduce the bitterness so you can fully enjoy that eggplant deliciousness. This trick helps to remove excess moisture from your eggplant slices or cubes, and reduce bitterness. Generously add salt to your cut eggplants and lay them out on paper towels. Cover with another layer of paper towels and let it sit for 30 minutes to an hour and a half. Make sure to clean off the salt afterward to avoid an overly salty dish. You can also rinse the salt off with cold water and dry again with paper towels. Lastly, you can also put pressure on the eggplant slices by pressing them by hand or putting a pan on top of the pieces and adding canned foods or other heavy items on top.
