Portobello mushrooms are meaty, which makes for a perfect burger alternative. They are also healthy, delicious, and filling, but if you don’t choose them properly, you may be discouraged from including them on your menu.
Look for ones with firm, smooth, and unblemished caps that are uniform in color. Make sure the stems are firm and uniform in color as well. They should be dry, not slimy, and the underside of the caps should be dry and feathery. Don’t store them in a plastic bag or container as those are meant to lock in moisture; keep them in a brown paper bag instead to avoid that moisture build up.
