Recipe of the Week-Sushi Bites

Ingredients: 

  • 1 pack of seaweed snacks (Sea Castle brand recommended)
  • 1/2 cup of cooked sushi rice
  • 1-2 Persian cucumbers, peeled and cut into thin strips 
  • 4 Kani sticks, cut in half and into thin strips 
  • Pinch of sesame seeds 
  • Low sodium soy sauce for dipping 

Assembly Instructions: 

  1. Place 1 tablespoon of rice in a seaweed snack.
  2. Add 1/2 a Kani stick. 
  3. Add cucumbers (as much or as little as you like).
  4. Sprinkle sesame seeds.
  5. Dip in soy sauce and enjoy.

Makes 8 sushi bites. Count as a complete meal.
