Recipe of the Week- Spinach Tomato Mini Quiches

Ingredients:

  • 2 cups fresh spinach leaves – shredded
  • 1 medium tomato – diced
  • 2 cups egg whites (you can use Egg Beaters)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350˚F/180˚C.
  2. Combine all the ingredients in a bowl.
  3. Lightly grease a muffin tin, then divide the mixture across 6 cups evenly. 
  4. Bake for 15 minutes or until the whites have set. Serve hot.

Makes 6 servings. Count 2 servings as your protein.
