Recipe of the Week- Roasted Tomatoes & Feta For Shavuos

A delicious addition to your dairy meals! 

Ingredients:

  • 2 pints cherry tomatoes
  • 1 shallot, quartered
  • 4 garlic cubes, defrosted 
  • 2 tablespoons olive oil
  • Kosher salt
  • Crushed red pepper flakes
  • 1 block of light feta cheese (8 ounces) 
  • Olive oil cooking spray

Instructions:

  1. Preheat oven to 400°F.
  2. Combine the first six ingredients in an ovenproof baking dish, tossing until combined.
  3. Place the feta in the center and spray with cooking spray.
  4. Bake uncovered for about 40 minutes until the feta is golden on top.

Makes 4 servings. Count each serving as a protein, vegetable, and fat.

Note: Try to avoid salty foods like feta cheese before a weigh-in as it may bloat you.
