A delicious addition to your dairy meals!
Ingredients:
- 2 pints cherry tomatoes
- 1 shallot, quartered
- 4 garlic cubes, defrosted
- 2 tablespoons olive oil
- Kosher salt
- Crushed red pepper flakes
- 1 block of light feta cheese (8 ounces)
- Olive oil cooking spray
Instructions:
- Preheat oven to 400°F.
- Combine the first six ingredients in an ovenproof baking dish, tossing until combined.
- Place the feta in the center and spray with cooking spray.
- Bake uncovered for about 40 minutes until the feta is golden on top.
Makes 4 servings. Count each serving as a protein, vegetable, and fat.
Note: Try to avoid salty foods like feta cheese before a weigh-in as it may bloat you.
