A delicious addition to your dairy meals!
2 pints cherry tomatoes
1 shallot, quartered
4 garlic cubes, defrosted
2 tablespoons olive oil
Crushed red pepper flakes
1 block of light feta cheese (8 ounces)
Olive oil cooking spray
- Preheat oven to 400°F.
- Combine first 6 ingredients in an ovenproof baking dish, tossing until combined.
- Place feta in the center and spray with cooking spray.
- Bake uncovered for about 40 minutes until the feta is golden on top.
Makes 4 servings. Count each serving as a protein, vegetable, and fat.
Note: try to avoid salty foods such as feta cheese before your weigh-in as it may bloat you.
