Recipe of the Week- Mashed Cauliflower Potatoes

Ingredients:

  • 1 head of cauliflower
  • Salt and pepper, to taste
  • Onions
  • Mushrooms
  • Peppers

Instructions:

  1. Break cauliflower into small pieces. 
  2. Place in a 9” by 13” pan with an inch of water. 
  3. Sprinkle salt and pepper, cover tightly, and put in the oven at 375°F for about 45 minutes until soft.
  4. In a pan, sauté onions, mushrooms, and peppers using Pam spray.
  5. Take cauliflower, drain the water, and mash (should be soft and mashable). Add the mashed cauliflower to the onion mixture with desired salt and pepper.
