Recipe of the Week- Low Calorie Beef and Broccoli Stir Fry


  • 1 tablespoon olive oil or olive oil spray
  • 1 ½ pounds flank steak (or any lean beef) very thinly sliced across the grain
  • 3 garlic cubes
  • 4 green onions, thinly sliced
  • 2-pound bag of frozen broccoli
  • 2 tablespoons cornstarch
  • ¾ cup water
  • ⅓ cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 teaspoon fresh ginger, minced
  • ¼ teaspoon crushed red pepper or less, to taste


  1. Heat the oil in a pan over medium-high heat. 
  2. Add the beef and cook until well-browned, about 6-8 minutes. Once well-browned, remove from pan and set aside – leave the beef drippings in the pan.
  3. In the same pan, add garlic cubes and green onions to the beef drippings. Cook for one minute, stirring frequently. Add broccoli and cover for 5 minutes.
  4. In a small mixing bowl, combine water and, cornstarch, and mix until smooth. 
  5. Combine soy sauce, honey, ginger, and red pepper flakes in a medium bowl. Add starch mixture and stir to combine. Set aside.
  6. Remove cover from pan and add sauce. 
  7. Cook until sauce starts to thicken, about 3-5 minutes. 
  8. Add beef and stir to combine, cooking an additional 2-3 minutes.

Makes 6 servings. Count each serving as a protein. 

Serve over brown rice if allowed on your plan. Enjoy!
