Recipe of the Week- Hot & Cheesy Spinach Spread

Try this dip with some whole wheat crackers to create a filling, nutritious meal.

Ingredients:

  • 10 ounces frozen chopped spinach (thawed and excess liquid squeezed out)
  • Plain Greek yogurt (4-ounce container)
  • 1-2 tablespoons light mayonnaise
  • 1/2 cup chopped scallions 
  • 2 cloves garlic (crushed)
  • 3 ounces shredded part-skim mozzarella cheese
  • Fresh pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Combine all the ingredients in a medium bowl.
  3. Place in an ovenproof dish and bake at 375°F for 20-25 minutes, until hot and the cheese is melted.
  4. Serve right away.

Makes 2 servings. Count each serving as a complete protein. Enjoy!
