Try this dip with some whole wheat crackers to create a filling, nutritious meal.
Ingredients:
- 10 ounces frozen chopped spinach (thawed and excess liquid squeezed out)
- Plain Greek yogurt (4-ounce container)
- 1-2 tablespoons light mayonnaise
- 1/2 cup chopped scallions
- 2 cloves garlic (crushed)
- 3 ounces shredded part-skim mozzarella cheese
- Fresh pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Combine all the ingredients in a medium bowl.
- Place in an ovenproof dish and bake at 375°F for 20-25 minutes, until hot and the cheese is melted.
- Serve right away.
Makes 2 servings. Count each serving as a complete protein. Enjoy!
