Recipe of the Week- Figgy​ Chicken

Ingredients:

1 pound boneless, 

skinless chicken thighs

1 onion, cut in wedges

8 fresh figs, halved

3 cloves garlic, smashed

Fresh rosemary

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon pomegranate molasses

1 Meyer lemon, cut into wedges

Instructions:

  1. Place chicken in greased baking dish. Arrange onion, lemon, garlic, figs, and rosemary around the chicken. Season with salt and pepper. Drizzle with olive oil and pomegranate molasses.
  2. Cover and bake at 400°F for 30 minutes. Uncover and bake until chicken is cooked through.
