Recipe of the Week-Cottage Cheesecake

Ingredients:

  • 1 pound low-fat cottage cheese
  • 1 pound farmer’s cheese
  • 18 ounces fat-free or low-fat cream cheese
  • 4 eggs
  • ½ cup xylitol
  • 1 capful of vanilla extract

Instructions:

  1. Preheat oven to 350°F.
  2. Mix all the ingredients until they reach a smooth consistency and pour into muffin tins or baking pan. 
  3. Bake for 45 minutes uncovered or more until golden brown.  
  4. Remove from oven and let cool before refrigerating.

Makes 12 servings. Count As: Breakfast or snack
