Recipe of the Week- Carrot Cake Bites


½ cup almond flour

½ cup + 1 tablespoon water

2 tablespoons unsweetened applesauce

½ teaspoon vanilla extract

1 teaspoon cinnamon

4 tablespoons zero-calorie sweetener

1 medium carrot (60-70g), finely chopped or shredded

4 tablespoons shredded coconut


  1. Combine almond flour, water, applesauce, and vanilla extract in a large mixing bowl, and stir.
  2. Add cinnamon, sweetener, and shredded carrots to the bowl. Stir to combine.
  3. Refrigerate dough for 15 minutes.
  4. Place shredded coconut in a small bowl.
  5. After 15 minutes, remove dough from the fridge and roll into 15 equal-sized cake balls. Roll each ball in shredded coconut until evenly coated.
  6. Store in refrigerator for up to a week.

Makes 12 balls. Count 3-4 balls as a snack or a treat
