Recipe of the Week- Banana Oat Breakfast Cups

Here’s an easy way to have a filling and healthy breakfast even if you are short on time in the morning.

Ingredients:

  • 2 mashed bananas (ripe)
  • ¾ cup unsweetened applesauce
  • 2 cups old-fashioned oats
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • Sprinkle of chocolate chips or raisins

Instructions:

  1. Preheat oven to 350°F.
  2. Mix all ingredients except for the chocolate chips. Pour mixture evenly into a 12-muffin pan. Sprinkle chocolate chips or raisins on top. 
  3. Bake for 15-20 minutes.

Makes 12 muffins.

Count 2 muffins as a complete breakfast or 1 muffin as a snack.
