Ingredients:
1 1/2 pounds ground chicken
1 large egg (beaten)
1/3 cup whole wheat flour
1 teaspoon garlic powder
1 sweet onion (diced)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup sugar-free BBQ Sauce
Coating:
3/4 cup whole wheat flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
Instructions:
- In a large mixing bowl add in the ground chicken, salt, pepper, garlic powder, and diced onions. Mix together.
- Add in the beaten egg and whole wheat flour. Mix with a spoon until everything is combined.
- Roll the chicken mixture into golf ball-sized balls.
- In a separate medium mixing bowl, mix together all the ingredients for the coating.
- Carefully roll each chicken ball into the coating mixture.
- Spray the air-fryer basket with cooking spray and add in each ball making sure not to overcrowd the poppers – you may need to make several batches.
- Set the fryer to 400F and cook 12-14 minutes, turning the poppers halfway through and spraying the balls with cooking spray to make them crispier.
- Remove the cooked chicken poppers and toss in the 3/4 cup sugar-free BBQ sauce or sauce of choice and serve immediately.
Makes 5-6 servings. Count each serving as a complete meal – don’t forget to add veggies!
