Ingredients:
1 ½ – 2 pounds chicken breasts, cut into pieces
1 medium sweet onion, thinly sliced
1 tablespoon olive oil
3 tablespoons of water
2 teaspoons minced garlic
2 cups sliced cremini mushrooms
1 cup sliced button mushrooms
(a variety of any mushroom works as well)
1 teaspoon garlic powder
2 teaspoons Trader Joe’s Mushroom Umami
Seasoning, divided
2 ½ tablespoons onion soup mix divided
1 tablespoon white cooking wine
Pepper, to taste
1 cup chicken stock
Instructions:
Heat up olive oil in a pan then add in the onions. Allow the onions to cook on a low flame. Add in a teaspoon of Trader Joe’s Umami Seasoning. When the oil is absorbed, add in the water.
Once the onion is cooked through, add in mushrooms along with the second teaspoon of Trader Joe’s Umami Seasoning and 1 ½ tablespoons of onion soup mix.
Add in two tablespoons of water and allow it to cook on a medium-high heat for two to three minutes.
Put the flame on medium low heat and cover the pan. Continue to cook until the
mushrooms release liquid and they are cooked through. Add in the chicken stock and white wine. Continue to cook for three minutes. Add in the chicken and 1 tablespoon of onion soup mix, and cook for ten minutes.
Serve with a side of rice or riced cauliflower or regular rice.
Makes 5-6 servings.
