(Modified) Recipe of the Week- The Best Banana Muffins

There are millions of healthy banana muffin recipes out there. 

We promise you, this one is the best! 

Full of healthy ingredients that are sure to keep you full and satisfied. 

Adapted from:


  • ⅓ cup coconut oil
  • ½ cup honey
  • 2 eggs
  • 1 cup mashed bananas 

(about 3 bananas)

  • ¼ cup water
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 ¾ cup whole wheat flour
  • 1/3 cup oats


  1. Preheat oven to 350°F. 
  2. I find the easiest way to make these is in a food processor. Add the eggs, honey, oil, banana, and water to a food processor. Process until the bananas are mashed and all the ingredients are combined. 
  3. Then add the dry ingredients and either turn on the processor again or just mix them in with a spatula. 
  4. Once the batter is complete, divide it into 12 muffin tins. 
  5. Bake at 350°F for 20-25 minutes.

Makes 12 Servings. Count 1 as a snack or 2 as a breakfast + fruit.
