Ingredients:
- â…“ cup coconut oil
- ½ cup honey
- 2 eggs
- 1 cup mashed bananas
(about 3 bananas)
- ¼ cup water
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 ¾ cup whole wheat flour
- 1/3 cup oats
Instructions:
- Preheat oven to 350°F.
- I find the easiest way to make these is in a food processor. Add the eggs, honey, oil, banana, and water to a food processor. Process until the bananas are mashed and all the ingredients are combined.
- Then add the dry ingredients and either turn on the processor again or just mix them in with a spatula.
- Once the batter is complete, divide it into 12 muffin tins.
- Bake at 350°F for 20-25 minutes.
Makes 12 Servings. Count 1 as a snack or 2 as a breakfast + fruit.
