(Modified) Recipe of the Week- Healthy Oatmeal Chocolate Chip Cookies

It’s the middle of the day and you’d love a sweet snack. Here’s a great one for you and it’s gluten-free!

Ingredients:

  • 1 ½ cups dry instant oats
  • ¾ cups oat flour
  • ½ teaspoon baking soda
  • ½ cup coconut oil
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon cinnamon
  • ¼ cups chocolate chips
  • ⅓ cups sugar

Instructions:

  1. Preheat oven to 350 degrees. 
  2. Mix the wet ingredients and then the dry ingredients in the same bowl. 
  3. Once everything is combined, form 12 equal-sized balls. 
  4. Bake at 350 degrees for 11-13 minutes. 

Makes 12 Servings. Count each serving as a snack.
