Recipe of the Week- Mini Cherry Cheesecakes

In Honor of Shavuos!  

Ingredients:

  • 2 eggs, beaten
  • 8 ounces reduced-fat cream cheese
  • 1 cup fat-free cottage cheese
  • ¼ cup sugar-free vanilla pudding 
  • ¼ cup sugar substitute
  • 1 tablespoon lemon juice
  • 2 teaspoons pure vanilla extract
  • 1 (10 ounce) can no-sugar-added cherry pie filling

Instructions:

  1. Preheat oven to 350°F.
  2. Mix the first seven ingredients in a blender.
  3. Pour into muffin tins.
  4. Bake for 30 minutes until set.
  5. Refrigerate overnight (or at least 4 hours).
  6. Spread cherry pie filling on top (just before serving).

Makes 12 mini cheesecakes. Count each as a snack.
