In Honor of Shavuos!
Ingredients:
- 2 eggs, beaten
- 8 ounces reduced-fat cream cheese
- 1 cup fat-free cottage cheese
- ¼ cup sugar-free vanilla pudding
- ¼ cup sugar substitute
- 1 tablespoon lemon juice
- 2 teaspoons pure vanilla extract
- 1 (10 ounce) can no-sugar-added cherry pie filling
Instructions:
- Preheat oven to 350°F.
- Mix the first seven ingredients in a blender.
- Pour into muffin tins.
- Bake for 30 minutes until set.
- Refrigerate overnight (or at least 4 hours).
- Spread cherry pie filling on top (just before serving).
Makes 12 mini cheesecakes. Count each as a snack.
