Recipe of the Week: Low Carb Sushi Sliders

Perfect for Shalosh Seudos or a light, easy dinner!

Ingredients: 

  • ½ a small avocado
  • Juice of 1 lemon
  • 1 large cucumber, sliced into 1/4″ coins
  • 1 pound sushi grade fish, chopped or shredded kani
  • 2 tablespoons light mayonnaise
  • 1-2 teaspoons sriracha (or to taste)
  • 3 green onions, thinly sliced (plus more for garnish)
  • Sesame seeds, for garnish
  • Low sodium soy sauce for serving

Instructions:

  1. Thinly slice the avocado then toss slices in lemon juice. Top each cucumber slice with avocado and season with salt and pepper.
  2. In a medium bowl, combine fish, mayonnaise, sriracha and green onions. Season with salt and pepper, and squeeze more lemon juice into the mixture, if desired.
  3. Top each cucumber slice with a small scoop of the sushi mixture. Sprinkle sesame seeds over each serving.
  4. Serve with low sodium soy sauce – avoid eating this before a weigh in.

 

Makes 4 servings. Count each serving as a protein.
