Perfect for Shalosh Seudos or a light, easy dinner!
Ingredients:
- ½ a small avocado
- Juice of 1 lemon
- 1 large cucumber, sliced into 1/4″ coins
- 1 pound sushi grade fish, chopped or shredded kani
- 2 tablespoons light mayonnaise
- 1-2 teaspoons sriracha (or to taste)
- 3 green onions, thinly sliced (plus more for garnish)
- Sesame seeds, for garnish
- Low sodium soy sauce for serving
Instructions:
- Thinly slice the avocado then toss slices in lemon juice. Top each cucumber slice with avocado and season with salt and pepper.
- In a medium bowl, combine fish, mayonnaise, sriracha and green onions. Season with salt and pepper, and squeeze more lemon juice into the mixture, if desired.
- Top each cucumber slice with a small scoop of the sushi mixture. Sprinkle sesame seeds over each serving.
- Serve with low sodium soy sauce – avoid eating this before a weigh in.
Makes 4 servings. Count each serving as a protein.
