Did you know that button, cremini and portobello mushrooms are actually the same mushroom just in a different phase of maturity? The white button mushroom is the youngest and picked before it matures into a cremini mushroom, in which stage it gains its initial brown color. Cremini mushrooms are picked before they have a chance to mature into the final stage which is the portobello mushroom that is bigger and meatier.
